Fresh Tomato and Basil Sauce

Fresh Tomato and Basil Sauce  (Jane Brody’s Good Food Book)

For this recipe, you will need:

2 large cloves garlic finely minced
1 cup peeled, seeded and chopped tomato
3 Tbsp minced Basil
2 tsp olive oil
½ tsp salt
Several dashes of cayenne

Puree the garlic and tomato in a blender. Pour into non-metal bowl. Stir in the basil, oil, salt and cayenne. Serve at room temperature.

Use on pasta, cold steamed vegetables, cold cooked chicken cubes, over tuna, or over hot rice or bulgur.
