Zucchini Butter

For this recipe, you will need:

1-2 large zucchini     
1 can frozen concentrated apple juice 
Sugar/brown sugar ½ & ½   
White Vinegar      
Lemon Juice 
Salt
Cinnamon
Cloves    
optional:  2 or more apples
optional:  Nutmeg, Allspice or Apple Pie Spice

Peel and seed zucchini (and apples). Cut into 1 inch or smaller cubes. Place in saucepan and add frozen concentrated apple juice. Cook until tender, about 20 minutes or so. Process mixture in blender or food processor until a smooth pulp is formed.

For each 2 cups of pulp add:
1 c. sugar (white or brown or half and half)
1 Tbsp each white vinegar and lemon juice
¼-1/2 tsp. cloves
1-2 tsp. cinnamon
A pinch of salt and any other apple pie spices desired.

Cook until blended, about another 20 minutes. May be sealed in jars—will keep indefinitely in the refrigerator.
